- Inizio col fare il ragù. Trito la cipolla e la faccio soffriggere in olio a fiamma media assieme alla carne trita sbriciolata a pezzetti. Intanto taglio la gamba di sedano in piccoli pezzi e lo stesso con la carota, li aggiungo e li faccio soffriggere. Quando il tutto si è abbastanza colorito, aggiungo la passata, il dado ed un poco di acqua che io ricavo dalla bottiglia della passata di pomodoro. Faccio cuocere lentamente per un'ora e mezza.
- Intanto preparo le lasagne. Ne immergo 3 massimo 4 alla volta in acqua bollente salata a cui aggiungo 1 cucchiaio di olio di oliva. Dopo qualche minuto, le tolgo una alla volta con l'aiuto di una schiumarola e le adagio tutte su degli asciugamani puliti per raffreddare.
- Ora preparo la besciamella. Metto in un frullatore il latte, la farina e trito un bel po' di noce moscata, ci aggiungo anche un po' di pepe nero. Frullo il tutto, dopodiché la levo e la metto in una ciotola media. Nel frattempo il ragù sarà cotto e quindi preparo il tutto da poi infornare.
- Prendo una pirofila da forno e inizio con il coprire il fondo con del ragù, sopra ci metto uno strato di lasagne, le copro di besciamella e pecorino, così un altro strato di lasagne, ragù, besciamella, pecorino, fino a esaurire il tutto.
- Per terminare, besciamella, pecorino, ragù e ancora pecorino. Metto in forno a 180 gradi per 30' circa. Una volta cotte..son pronte per essere gustate! Buonissimo piatto.
