  3. Latte p.s. senza lat100 ml. (A piacere..anche di riso o di soia)

  7. Crema di soia (o a piacere besciamella)
  8. Granella di pistacchi
  9. q.b Olio evo
  10. Verdure lesse di montagna o (spinaci, bieta...etc.)

  1. In un bicchiere alto, mettere, la farina, l'uovo, il latte, sale q.b..con un minipimer creare una pastella e farla riposare per 1/2 ora.
  2. Con un mestolo, versare il composto in una padella antiaderente, unta di olio.
  3. Fare le crepes fino ad esaurimento della pastella.
  4. Pulire, lessare la verdura. Farla raffreddare e tagliarla finemente.aggiungere la mousse di formaggio e la mortadella tritata e del parmigiano grattugiato dop.
  5. Disporre tutte le crepes in modo ordinato e dividere l'impasto per tutte le crepes.
  6. Preparare adesso il vero e proprio involucro chiuso a fagottino per evitare la fuoriuscita del condizimento. (Alla Marco Valletta).
  7. Chiudere prima i lembi più corti, e poi i laterali.
  8. Sul fondo mettere la rema di soia con del parmigiano grattugiato ed adagiare le crepes.versare sopra la restante crema di soia ed il parmigiano grattugiato. Infine spolverare con la granella di pistacchi. Infornare a 170° x 10 minuti.
  9. Infine comporre il piatto come da foto ogni piatto.
