- Per la Pasta: In una planetaria impastiamo la Farina con le Uova sbattute. Una volta ottenuta la pasta, datele una forma a panetto, avvolgetela nella pellicola trasparente e lasciatela riposare per 30 minuti in frigorifero. Passato il tempo di riposo, stendete la pasta con una sfogliatrice o a mano e create dei rettangoli spessi circa 1 mm. Adagiamo i nostri rettangoli su una tovaglia, spolveriamo con della farina di grano duro su entrambi i lati e lasciamo asciugare per circa 1 ora.
- Per la Farcitura: Tagliamo il Radicchio a pezzi più o meno grossi; Tagliamo la Zucchina, la Carota e la Melanzane a stecchini. In una padella aggiungiamo un filo d'Olio e facciamo saltare per qualche minuto le Carote, asciughiamole per bene e mettiamole da parte con le altre verdure. Scoliamo le mozzarelle e tagliamole a cubetti.
- Per la Besciamella: Scaldiamo il latte in un pentolino. Nel frattempo in un'altro pentolino mettiamo il burro, la farina, il sale e la noce moscata, una volta che il burro si sarà sciolto,amalgamandosi con la farina, andrà a formare una pappina. Lasciate cuocere fino a quando non sarà diventato marroncino chiaro, aggiungete il latte e cuocete continuando a girare, fino a quando il tutto non si sarà addensato.
- Ora che abbiamo tutti i nostri elementi possiamo assemblare la nostra lasagna. Iniziamo con una base di besciamella, adagiamo un rettangolo di pasta, la besciamella, le verdure e per finire la mozzarella. Continuiamo così fino a quando la teglia non sarà piena. L'ultimo strato dovrà essere di Besciamella, Verdure e Mozzarella. Inforniamo a 190 gradi per 30 minuti. Se la superficie si dovesse iniziare a dorare più del dovuto, coprire con della stagnola.
