  11. 1 pizzico pepe
  12. 500 ml besciamella

  1. Rompere le uova, aggiungere un pizzico di sale e iniziare a mescolare. Versare il burro fuso e la farina un po' alla volta fino ad ottenere una pastella molto densa. Continuando a mescolare versare un po' alla volta il latte. Scaldare una padella antiaderente, (io ho usato una padellina di 20 cm circa) imburrare leggermente il fondo. Versare un mestolo di composto e cuocere a fiamma media per un minuto e poi girare la crespella e cuocere per un altro minuto fino a doratura.
  2. Versare la ricotta in una ciotola e schiacciarla con una forchetta, aggiungere gli spinaci cotti e scolati, il parmigiano, la mozzarella, un pizzico di sale e la noce moscata. Mescolare bene e mettere da parte, dopodiché preparare la besciamella.
  3. Cospargere il fondo di una pirofila o un contenitore di alluminio, con un po' di besciamella. Versare un paio di cucchiai di besciamella anche su ciascuna crespella e spalmare anche un cucchiaio di ripieno. Richiudere le crespelle e sistemarle sulla pirofila. Con queste dosi io ho riempito due pirofile piccole circa 20x30. Versare la besciamella rimasta per ricoprire le crespelle e spolverizzare con formaggio grattugiato.
  4. Infornare a 180° per circa 30 minuti, formeranno una gustosa crosticina fuori e saranno morbide e filanti all’interno.
