  1. Per la preparazione dei paccheri iniziamo a preparare il ragù. Prendete un tegame versate dell’olio e la cipolla tritata e cuocete per qualche minuto per farla dorare, versate poi la carne tritata rosolate ancora a fuoco vivo sempre mescolando finchè non sarà ben cotta. Versate metà della carne tritata in un altro tegame.
  2. Adesso cuocete i due sughi separati. Per il ragù bianco: versate alla carne tritata già rosolata 1/2 bicchiere di acqua, del sale e portate a cottura per circa 5 minuti. Per il ragù rosso: versate la passata di pomodoro, il sale e cuocete per circa 10 minuti, finchè non si restringe un pò, se serve aggiungete dell’acqua.
  3. Nel frattempo portate a bollore dell’acqua,salate e cuocete i paccheri; scolateli al dente aggiungete un filino di olio per non farli attaccare, e lasciateli raffreddare. Preparate pure la besciamella io ho usato il bimby e in pochissimi minuti è pronta. versate tutti gli ingredienti nel boccale del bimby, portate a temperatura 90° velocità 4 per 6/7 minuti, deve essere abbastanza liquida, non troppo densa.
  4. Se non avete il bimby preparatela dentro un pentolino sul fornello: versate il burro morbido, un pò di latte, la farina, la noce moscata, il sale, mescolate bene per evitare grumi, aggiungete il resto del latte e sempre mescolando con una frusta a fuoco basso portate a cottura finchè non si addensa.
  5. Una volta cotti i due ragù aggiungete ad ognuno, dividendo a metà: il grana grattugiato, i pezzettini di provola e prosciutto cotto mentre al ragù bianco aggiungete anche qualche cucchiaio di besciamella per renderlo più morbido.
  6. Mescolate ed amalgamate bene i due ripieni poi farcite i paccheri, man mano adagiateli su una teglia dove alla base avete spalmato un pò di besciamella e cosparso di grana grattugiato. Mettete da un lato i rossi e dall’altra i bianchi, a piacere potete utilizzare e dividerli in due teglie separati. Coprite i paccheri con la besciamella e qualche cucchiaio di ragù rimasto, a piacere altro grana grattugiato e poi passate la teglia in forno.
