  3. Contemporaneamente in un pentolino scaldate dei funghi champignon con un pizzico di sale e un filo d'olio d'oliva. Saltateli qualche minuto poi scolateli e aggiungeteli al riso.
  4. Prendete una pirofila da forno mettete qualche noce di burro e uno strato di risotto.
  5. Poi mettete una mozzarella a dadini, lo speck a striscioline, metà besciamella e una bella spolverata di grana padano e granella di pistacchio.
  6. Ricoprite con il riso rimanente.
  7. Poi mettete la mozzarella, la besciamella e la zucca che avevate messo da parte e spalmate per bene.
  8. Spolverate con del grana padano e della granella di pistacchio.
  9. Infornate a 180° per circa 20/25 minuti.
  10. Lasciate raffreddare per almeno 10 minuti e servite!
