 - 2 cucchiai porro
 - 1 litro besciamella fatta in casa (latte,burro,farina,noce moscata e sale)

 - 1/2 bicchiere vino rosso secco
 - 1 salsiccia (o speck) luganega o speck a pezzetti
 - q.b sale

 - q.b burro
 - 1 cucchiaino cannella per la zucca

- Togliete la buccia alla zucca,i semi e la barbetta interiore,poi tagliatela a pezzetti e frullatela. Mettete il tutto in una padella con del burro,sale e poca acqua affinché non si attacchi sul fondo,il porro tritato e cuocere a fuoco moderato, mescolando spesso.

A metà cottura aggiungete mezzo bicchiere di vino rosso secco,sfumate e aggiungete la luganega o lo speck a pezzetti e finite di cuocere finché il radicchio sarà tenero ed il liquido si sarà ben assorbito. (la luganega è una salsiccina lunga e magra)
 - Fate la besciamella, come siete abituati fare ed iniziate la composizione del pasticcio
 - Sul fondo di una pirofila mettete poco burro sciolto,poi uno strato di pasta,uno strato di zucca,ciuffetti di besciamella e una spolverata di grana;poi uno strato di pasta,uno di radicchio rosso coperta da besciamella e una spolverata di grana. Continuando così alternando zucca e radicchio e finendo con delle fette di scamorza affumicata e la rimanente besciamella e grana.
 - Infornate a 200 gradi per 5 minuti e poi a 180° per altri 20. Alla fine un colpo di ventilato per 5 minuti per dorare bene la superficie.
